Jianxi Province, the birthplace of the exquisite leaf used to make this fabulous matcha is also the birthplace of an art form known as the Tea Plucking Opera. Tea Plucking Operas got their start when pluckers, working the tea fields many centuries ago, would sing long operatic songs to one another to help pass the time during the long days of peak plucking season. Over time, these beautiful songs came to be adopted by traveling troupes of players who set them to music, performing them from town to town and eventually in large opera houses throughout China. It is believed that the following verse came from one such opera developed during the manufacture of Pearl River green tea, the source leaf for this blend.

Sailing all my life on lake and sea,
Why not set my house on anchor,
At a scenic spot,
Bucket up water under the Song-Jiang Bridge
Enjoy a cup of new tea
On Dangling Rainbow Arbour

While the name of the first tea plucker to sing the song has long been lost to the mists of time, the tea he or she helped produce still delights tea lovers to this day. In fact, Organic Pearl River green is still plucked and processed in the same way it was so many hundreds of years ago. With this blend, what differs is the patented method by which this leaf has been ground to produce matcha. To make it, only the finest leaves are processed and ground using a traditional Japanese stone grinder to powder the tea. Once powdered, the leaves fully release their rich antioxidant and polyphenol content and develop the thick, grassy character for which it has come to be prized. We’re sure you’ll love this matcha as much as we do – and we won’t be surprised if it spurs you to pen a few melodious verses of your own.
